Pulled Meat Quesadillas w/ Salsa
Serves 2
Ingredients:
6 Mini Tortillas
3 200gm Pulled Meats (of your choice)
Cheese, to your taste
Jalapenos, to your taste
Salsa:
3 Large tomatoes
1 Red onion
Bunch of coriander, to your taste
Jalapenos, to your taste
2 Cloves garlic
Tbsp Lime juice
Tbsp Olive oil
Salt & pepper
Topping:
Sour cream
Coriander
Method:
Start by making your salsa. If using a food processor, roughly chop large chunks of everything and blend for a couple seconds at a time until you get your desired result. If you’re after a chunkier salsa, just hand dice everything and stir together.
Then heat your Pulled Meats up so they’re ready to go - snip a corner of the plastic and pop in the microwave for two and a half minutes. We like to prep all the quesadillas first before cooking, so you’re not doing too many things at once. Simply place your meat, cheese and jalapenos over half the tortilla, then fold and press the ‘plain’ half over top.
Use a dry non-stick frypan or a lightly oiled/buttered pan and lightly toast the quesadillas so the outside is golden and the cheese has melted inside!
