400gm Hereford Prime Beef Mince
200gm Magills Bacon Mince
2 tbsp breadcrumbs
Ciabatta loaf cut into serves or ciabatta buns
400gm can of Diced Tomatoes
1 heaped tsp Capers
1 Heaped tbsp Olives (pitted)
2 tsp chilli paste, flakes or fresh chilli
Italian flat leaf parsley
Preheat the oven to 180 degrees fan bake.
First blend all tomato sauce ingredients until smooth.
Next combine beef mince, bacon mince, breadcrumbs and egg in a bowl. Roll small meatballs and place in a dish - aim for 20-30 gm in size.
Cover the meatballs in the sauce and mozzarella. Place the dish with meatballs, sauce and mozzarella in the oven for approx 30 mins or until the meatballs are cooked.
Spread your ciabatta with garlic butter and lightly toast until the butter is melted and the bread has a little crunch.
Serve with fresh rocket, and top with Italian parsley and a generous amount of grated parmesan cheese!
