Serves 3-4
Ingredients:
400gm Chicken
200gm Magills Bacon Mince
200gm Basil Pesto
400-500gm Short Pasta (of your choice)
Punnet of Cherry Tomatoes
300gm Fresh Spinach or Rocket
To Serve:
Fresh Basil
Grated Pecorino or Parmesan
Kapiti Artisan Garlic Fold
Quick Pickled Onion:
1 Red Onion
500ml White Vinegar
2 tbsp Caster Sugar
Method:
Start by making the quick pickled onion. Thinly slice red onion, cover with white vinegar and add sugar into an airtight container and pop in the fridge for at least an hour.
Dice chicken, and pop a pot of salted water on to boil. Once the water is boiling add your pasta.
Cook the chicken and bacon mince together in a frypan. Whilst this is cooking, chop up your cherry tomatoes.
Once chicken/bacon and pasta are cooked, drain pasta and put in a bowl. Add the chicken, bacon, tomato and pesto and mix to combine. Lay spinach or rocket in a bowl, add your pasta on top and serve with grated cheese, fresh basil and pickled red onion.
Can be served cold.
