Serves 2
100gm Magills Bacon Mince
300gm Dried pasta - we like something small and curly but can be whatever you have in the pantry
Tbsp Butter
2 Tbsp Flour
1.5 cups Milk
100gm Gruyere cheese, grated
100gm Tasty cheese, grated
Tsp Paprika
Tsp Nutmeg
2 Shallots or 1 Brown onion
Method:
Start by putting the pasta on to cook. Boil a pot of salted water, once bubbling, add pasta and give it a stir every now and then.
Finely dice your onion and pop this and bacon mince in a fry pan, cook until done.
By this time your pasta should be a couple of minutes away from being done, which means you can start on the sauce.
On a medium heat in a small pot, melt the butter. With a whisk, stir in the flour until it’s fully mixed with butter. As soon as it's combined, add your milk slowly but keep whisking the whole time. Continue whisking to dissolve all butter/flour lumps. When the sauce starts to thicken add all your grated cheese, nutmeg, and paprika. Continue to whisk until everything is nice and thick and combined!
Combine your sauce and pasta and stir to mix thoroughly. You can add your bacon/onions and mix or pop them on top. Enjoy!
