200gm Magills Pulled Beef (this can be easily substituted)
Rigatoni pasta for two
1 yellow or orange capsicum
3 tbsp tomato paste
Onion, garlic, chilli, nutmeg, salt and pepper for seasoning
Preheat the oven to 180 degrees. Dice up pumpkin and capsicum, season with garlic, onion, chilli, nutmeg, salt and pepper. Place in the oven, and cook for approx 30 minutes or until soft.
When the pumpkin is about 10 minutes away from being done, boil salted water and cook pasta until al dente.
Once the veggies are cooked, blend with cream, tomato paste and a tiny bit of pasta water to get your desired consistency. Heat your Pulled Beef for two and a half minutes.
Combine cooked pasta with sauce and mix, then serve with Pulled Beef, rocket, dukkah and feta!
