Ingredients:
200gm Magills Pulled Pork
2 Tbsp Soy sauce
1 Tbsp Chinese Black Vinegar
1 Tbsp Chinese Cooking Wine
1 Tbsp fresh Ginger
2 tsp Gochujang paste
2 Tbsp Chilli oil
1 cup Mushrooms
1 Brown onion
2 Eggs
1-2 bundles dried Egg noodles
Topping:
Chilli oil
Coriander
Spring onion
Peanuts
Method:
Start by chopping up your mushrooms and onion. Then put a pot of salted water on to boil, once boiling, add the egg noodles.
In a frying pan, put your mushrooms, onion, soy sauce, black vinegar, cooking wine, ginger, gochujang paste, chilli oil and Pulled Pork (removed from bag) on medium heat. Stir and break the pork up until everything is well mixed and cooked through.
When your pork mix and your noodles are done, add together and continue frying until your noodles look a little crispy. Whisk your eggs then add to your frypan. Continue to fry until the egg is fully cooked and well mixed throughout.
Place in a bowl and top with your choice of fresh coriander, more chilli oil, peanuts and fresh spring onion. Enjoy!
