Serves 4
700gm Boneless skinless chicken
Rice - to your preference
120gm Spinach
400gm tin Chopped tomatoes
1 whole brown onion
3 tbsp curry powder
1 tsp chilli powder
2 tbsp ground cumin
2 tsp ground turmeric
To serve:
Fresh coriander
Greek yogurt
Fresh chilli
Method:
Begin by dicing chicken and onion.
In a frying pan, add some oil and place onion and curry powder, chilli powder, ground cumin and turmeric and stir until onion is soft and fragrant.
Begin cooking rice via your preferred method.
Then place spinach in a colander, and pour boiling water over to wilt. Then in a blender blend tomato, spinach and onions until smooth.
Back to the fry pan - cook chicken until lightly browned, then add the tomato/spinach/onion mix and stir until chicken is fully cooked.
Once rice is cooked, place in bowls with the Saagwala mix and top with your choice of yogurt and fresh herbs!
