Serves 4
Ingredients:
400gm Magills Pulled Beef
1 tin coconut milk (400ml)
1 brown onion
1 stalk lemongrass
3 cloves garlic
Red chilli - to your taste
1 tbsp peanut butter
4 tbsp tomato paste
2 tsp ground cumin
2 tsp curry powder
2 tsp ground coriander seeds
2 tbsp olive oil or ghee
Veggies - whatever you like! We use frozen peas and beans.
Rice - to your taste
To serve:
Greek yogurt
Coriander
Fresh chilli
Roti or naan
Method:
Start by putting your rice on to cook.
In a blender or small food processor blitz your onion, lemongrass, garlic, chilli, peanut butter, tomato paste, cumin, ground coriander, and curry powder to make your paste.
In a frypan heat your oil or ghee then add your paste and heat for a further 5-7 mins until fragrant. Then add the Magills Pulled Beef, coconut milk and vegetables (if using).
While this is cooking, start heating your roti or naan. The curry should only take 5 or so minutes to cook as the beef just needs to be reheated.
When the rice, curry and naans are cooked, serve with your choice of toppings and enjoy!
