Pulled Beef Massaman Curry

Magills x My Food Bag Pulled Beef Massaman Curry


Serves 2


Ingredients: 


200gm Magills Pulled Beef 

Half cup Jasmine Rice 

400ml Coconut cream or milk

1 Brown Onion (diced)

1-2 stalks Lemongrass 

1 tbsp Massaman Curry Paste 

3-4 Baby Potatoes (diced) 

1 tspn Tamarind Paste

2 tspn Fish Sauce


Topping: 

Peanuts

Chilli

Coriander 


Method:


Start by adding your chopped onion, Massaman paste and lemongrass together. Heat in the frypan for 2-3 minutes. This should be getting fragrant.


Add your coconut cream or milk and stir for another couple of minutes. Then add your chopped baby potatoes, tamarind paste and fish sauce. Simmer on a low-medium heat until the potatoes are cooked. Whilst this is cooking, pop your jasmine rice in with 1 cup of water and cook your preferred way.


Once the potatoes are cooked, open your Magills Pulled Beef and remove from plastic. Add to your curry and stir for a few minutes until Pulled Beef is heated through. Try to keep some bigger bits of the beef in tact! 


Serve on your rice, and top with your choice of chopped peanuts, fresh chilli and fresh coriander!
