Rigatoni pasta 400gm
4 tbsp tomato paste
4 tbsp Vodka
5-6 Magills Pork, Fennel & Chilli Sausages (can sub out with different flavours)
Pecorino or Parmesan cheese
Salt & Pepper
Begin by boiling a pot of salted water. Add pasta in to cook.
Once it's near done, squeeze the meat out of sausage casings into a hot frypan.
When the sausage has started to brown, add vodka and cook for 2-3 mins, then add tomato paste, cream, onion, garlic, and oregano.
Mix until the sauce is a nice orange colour and starting to thicken slightly. When pasta is cooked, spoon into the pan with sauce and add approx ⅓ cup pasta water to the mix. Stir to combine everything, then serve with fresh basil, grated cheese and lots of pepper!
